FRESH CHUTNEY:

No Indian curry is complete unless it is accompanied by at least a dab of the homemade relish known as a fresh chutney. These are not preserved chutneys; rather they are made daily from the fruits, vegetables and herbs at hand. The flavor is sometimes tempered through cooking or marinating, but most fresh chutney are a simple mixture of raw foods, ground or finely cut, and blended with seasonings.
